Iced Coffee in Thai Heat: Why Most of It Is Watery, and What We Do Instead
By eleven in the morning in April, nobody in Pattaya wants a hot drink. Iced coffee stops being a preference and becomes the only sensible option.
Which makes it strange how much bad iced coffee there is. You order something that looks right — tall glass, condensation running down the side — and three sips in it has become brown water with a coffee memory.
Here is why that happens, and what a café can do about it.
The dilution problem, with numbers
A standard double espresso is about 60ml of liquid. A tall iced coffee glass holds 350 to 450ml. The rest is ice and milk or water.
Ice does not sit politely in the glass. In a 34-degree room it starts melting immediately, and a full glass of ice releases 100ml or more of water as it goes. That water is not neutral — it is actively diluting a drink that was already mostly not-coffee.
So a drink that started as one part espresso to four parts everything else ends up at one part to six. That is the entire mystery of watery iced coffee. There was never enough coffee in it to survive the melt.
The four ways it goes wrong
Not enough coffee to start with. The commonest fault by a distance. A single shot in a 400ml glass was never going to work. Iced drinks need more coffee than hot ones, not the same amount.
Hot espresso poured straight over ice. The espresso is at 90-plus degrees. It hits the ice and instantly melts a large portion of it, so the drink is diluted before it reaches you. It also gets a harsh, sour edge — thermal shock does espresso no favours.
A delicate blend that vanishes. A light, floral, high-acidity arabica can be wonderful hot. Chill it, add milk and 200ml of melting ice and there is nothing left. Delicacy is the wrong quality for this drink.
Bad ice. Ice made from untreated tap water tastes of what the tap tastes of, and as it melts it puts that flavour directly into your coffee.
What actually fixes it
More coffee, not less ice. Removing ice makes the drink warm, and warm iced coffee is worse than diluted iced coffee. The answer is to build the drink so that when it dilutes, it lands where it should.
A blend chosen for body. This is where our robusta-and-arabica house blend earns its place. Robusta brings weight, crema and chocolate depth. Those are exactly the characteristics that survive milk, cold and dilution — a heavy-bodied espresso still tastes like coffee after 100ml of meltwater, and a delicate one does not.
It is the same reason traditional Italian espresso blends have always contained robusta. It is not a compromise, it is the right tool for drinks with things added to them.
Consistent extraction. Grind behaves differently in the humidity here than it does in a dry room, and it shifts through the day. Our Wega machine holds temperature and pressure steadily through a busy morning, but somebody still has to notice the grind drifting and correct it. That is what experienced baristas are for, and it is the difference between the first iced latte of the day and the fortieth tasting the same.
What to order when it is hot
Iced Latte — ฿70. The default and the right answer most days. Milk, ice, espresso with enough body to stay present.
Iced Americano — ฿70. If you want the coffee itself rather than a milk drink. The cleanest way to judge whether a café's iced coffee is any good.
Iced Espresso — ฿70. Concentrated and short. Nowhere for a weak blend to hide.
Iced Cappuccino — ฿70. More foam, less milk volume, so the coffee reads stronger than in a latte.
Iced Mocha — ฿80. Chocolate and coffee, and the blend's chocolate notes push in the same direction rather than fighting it.
Coconut Latte — ฿105. Coconut and coffee is a genuinely good pairing in this climate — the sweetness and the fat both work with a heavy-bodied espresso.
Nutella Iced Latte — ฿115. For when it is not really about the coffee, and that is fine too.
Esperrier Iced Lemon Espresso — ฿115. Espresso with citrus. Sharper and more refreshing than it sounds, and a genuinely different answer to the heat.
Practical advice for ordering in the heat
Drink it reasonably promptly. No iced coffee improves over forty minutes. This is true everywhere.
If it is going to sit, order it stronger and smaller. An Iced Espresso holds up far better on a desk than a tall latte does.
For delivery, iced drinks are the easy case. Sealed cup, ice, no steam problem. An Iced Latte arrives essentially as it left, which is not true of most hot drinks after fifteen minutes on a motorbike.
Afternoon is smoothie territory too. A Mango Smoothie or Mixed Berries Smoothie at ฿80 is sometimes a better answer to two in the afternoon than more caffeine.
